The process begins with native Criollo, naturally organic heirloom cacao varieties, grown in biodiverse agroforestry systems, far from high traffic, polluted roads. Trees are cultivated in polyculture ecosystems rather than monoculture plantations to protect soil integrity and ancestral plant lineage.
2. Mindful Harvesting
Selecting peak ripeness by hand, one cacao pod at a time
Ripe cacao pods are hand-harvested using precise cuts to avoid damaging the tree's flowering cushions. Only fully mature pods are chosen to ensure optimal sugar levels in the white pulp surrounding the seeds. All moldy and improper beans are immediately rejected.
