4. Gentle Sun-Drying

5. Minimal, Low-Temperature Roasting (Raw Treatment)

Beans are gently roasted at very low temperatures, between 110 and 120 degrees. This makes the outer papery shell brittle enough for winnowing while preserving temperature-sensitive antioxidants, minerals, and neurochemicals. High industrial heat is strictly avoided.
6. Winnowing
